Because the mountains were so steep, mechanized industrial farming never came to the valley. And so, farming by hand without pesticides and fertilizers has been practiced since the first inhabitants (like nearby Ozzie). Simply: Val di Gresta was organic before organic was cool.

Besides the famous tradition of sipping local red wine with salami, you´ll discover vegetable and typical Grestan dishes with hearty flavors. History blends harmoniously grown tastes into a complex culture of food and wine that is unparalleled in Trentino.

Our restaurant offers regional and vegetarian menus that make the best of the organic vegetables of Val di Gresta. Recently renovated and decorated with masterpieces by the painter Germano Alberti, the dining room offers a warm atmosphere. Enjoy a dining experience in either the main room, in the glass veranda or the open beer garden. Breathe the clean air of the mountains and be beckoned back to your temporary home by the aroma of a genuine and enticing cuisine that knows only the natural and ancient farming of the valley.

Our kitchen employs the slow food philosophy (the opposite of fast food). We take our time to prepare, we let the seasons dictate the ingredients and, whenever possible, we get from the closest (not the cheapest source). Often your meal will not have traveled more than a few meters from where it was grown in one of our fields, and you are welcome there to see the growing cycle and even pick what you´d like to eat or take home.
